This secondary maturation in French Oak ex-Tasmanian Pinot Noir casks adds beautiful red berry notes and a unique Tasmanian influence to this small batch single malt
Each variety is then pressed back to stainless & left to rest on gross lees over the winter (also in stainless) before gravity racking

40 days of maceration on skins and then aged in huge Slovenian oak barrels
